Beyond Kombucha, brewer and distributor of Artisian quality Kombucha, made its product debut last June, via Cafe Bar and its lucky customers. Monika’s always on the look out for the best, locally produced, speciality food products. Monika met Spiro, Beyond’s founder, who owns a building right here in Astoria, where he produces NYC’s first, locally distributed, Artisan quality Kombucha teas. Spiro’s admits, he’s been a Kombucha fan since ‘98, when he first discovered GT’s on the West Coast. He can even recall the first time he saw GT’s sold here on the East Coast; sometime in ‘02. Spiro, a confessed Tim Ferriss fan, hooked up with tea connoisseur Hoover Le, and brewmaster Victoria Taub–as Siberian emigress who grew up on the stuff–, to develop a Kombucha blend, based on a fine tea.

Beyond Kombucha prides itself on several key processes;
● A special fermentation process; Fermentation (1 week), followed by Ageing (1 week),
then shipped directly to customers and stores, resulting in a product that is not overly
acidic, but rather, delicate and polished in taste.
● Beyond avoids conventional flavoring techniques and focuses on the Tea–sourcing
unique, high quality teas, from all corners of the earth, to use as the special base, vs.
conventional ‘fruit’ flavors.
● Each ‘batch’ is fermented in a two gallon glass jar = 18 bottles of product. This attention
to quality helps support the unique flavors of the base tea.
● Each bottle features a hand-made label, with watercolor artwork by Spiro’s mom!
